As a child I loved Turkish Delight. I could completely understand how Edmund in The Lion, the Witch and the Wardrobe was happy to sell his siblings down the river for a never-ending supply of it!
It wasn’t until years later that I discovered that rose was the primary flavour component and started using it in cakes, trifles and crème brulée. We combine rose syrup and top quality rose essence to make this macaron taste like a little piece of Turkish Delight heaven.
