This flavour is originally a creation of Pierre Hermé, the undisputed master of macarons. The combination of sharp passion fruit juice with rich milk chocolate is a compelling one and results in a smooth ganache that wonderfully enhances the taste of both. What a Genius!
We use slightly higher cacao content chocolate in our macaron, than does the maestro, so that our filling retains the sweetness but makes for a more full-bodied taste.
