This is a bitter-sweet moment. One of the puddings I used to love when growing up was a variation on Julia Child’s Mousseline au Chocolate, a delicious concoction of chocolate, orange liqueur and orange zest.
I wanted to replicate that taste in this macaron. Orange juice is actually quite sweet and needs a 50% cacao chocolate or more to achieve the perfect bitter-sweet balance in a delicious and lingering combination.
