This is a bitter-sweet moment. One of the puddings I used to love when growing up was a variation on Julia Child’s Mousseline au Chocolate, a delicious concoction of chocolate, orange liqueur and orange zest.
I wanted to replicate that taste in this macaron. We use blood orange juice which is less acidic and more flavourful than ordinary Orange juice, however it is quite sweet and needs a 50% cacao chocolate or more to achieve the perfect bitter-sweet balance in a delicious and lingering combination.
