The first mojito I ever had was in Cuba, standing on a roof terrace overlooking a palm filled square in Havana where the buildings opposite still had bullets holes from the revolution of ’59!
The key to the perfect mojito is getting the right balance between the sweetness of the sugar, the citrus zing of lime and the fresh, herbaceous mint; the moment I tasted it I knew it would make a wonderful macaron filling. We use fresh lime juice and fresh mint to ensure it tastes authentic.
