I love the taste of lemons. My Danish grandmother used to make a classic Danish dessert called Citronfromage (aka lemon mousse). It is very light, and the sharply tart lemon flavour is complimented by sweet whipped cream and a garnish of candied lemon peel. This is the exact flavour that we have created for our lemon macaron filling, right down to the tiny pieces of micro lemon zest whipped through it.
