Pistachios are one of the oldest cultivated nuts (literally biblical, see Genesis 43:11) and yet their rich nutty, earthy taste is actually very hard to describe.

Pistachios are mostly grown in three places: Iran, Turkey and California, however there is also tiny production in Sicily and Greece, and as you would expect there are endless debates about which are best!

We use two different pastes: Iranian and Sicilian, to create our pistachio filling which seems to do the trick very nicely!
